There is a way to disable stability control which may allow more rear-wheel spin, but it is not something I would recommend in a 4000+ lb Italian luxury vehicle:

ESC off
The “ESC off” mode is aimed for a
more spirited driving experience but
also purposeful for driving in deep
snow, sand, or gravel. The current
mode disables the TCS portion of the
ESC and raises the threshold for ESC
activation, allowing higher wheel spin
than normally granted by the ESC
system.

You should have bought a Corvette. It would have been cheaper and you can spin the tires all day. If it was me, I would not be looking to damage the powertrain with burn outs.

Not looking for a car to do burn outs all day. It would be nice to do it once in a while. You know, experience the full potential of the machine.
